Summer has officially started in the Northern Hemisphere and even though summer this time around may look a little different who are we kidding, this summer this year looks like we are on a whole another planet and we don’t even know how we got there. Even though we might not be taking flight just yet to those planned adventures we can still indulge in the beauty of summer from our own backyards and for today on AMGR I’m sharing with you all one of my favorite recipes that is a summer staple at my home and it’s my Summer Beet Quinoa Salad Recipe that is not only delish, but it’s easy to make and here’s how.
What you’ll need
1 cup of Organic Quinoa
1 1/2 cups of water
1 bunch of fresh beets
1 cup of dried cranberries or cherries
2 whole Ruby Red Grapefruits
2 cups of fresh spinach
We are going to get started by taking one cup of the quinoa and rinsing it thoroughly and then transferring the quinoa into your saucepan.
Add 1 1/2 cups of water into the saucepan and then you can move onto step 3.
In this step you are going to thoroughly wash and peel your beets and cube them into smaller pieces and transfer into the saucepan with the quinoa, cover your saucepan with a top and place on the stovetop on medium high until the quinoa has absorbed all of the water and has turned a reddish color. Your beets should be slightly tender.
Now you are going to remove the rind from the grapefruits and begin to slice the grapefruit into smaller wedges, but make sure to collect any excess juice from the grapefruits and place into a bowl with the wedges and set aside.
Right about now your quinoa should be ready and should look like the picture above at this point just turn off the heat on your stovetop and while the quinoa is still hot, add two cups of fresh spinach into the mix one cup at a time and combine afterwards you can then move onto the next step.
Now add your sliced grapefruit along with the juice from the grapefruit and mix right in with the quinoa and other ingredients.
And finally we add one cup of dried cranberries into the mix and combine with the other ingredients and then our Summer Beet Quinoa Salad is done! Just place in a dish and transfer into your fridge and allow it to fully cool before enjoying.You can enjoy this Summer Beet Quinoa Salad Recipe on its own or add it as a tasty side dish either way this recipe is delish and perfect to enjoy anytime.
