What you’ll need
Zucchini Spaghetti (Fresh or Forzen) (Spirals)
Raw shrimp
Cherry Sweet Tomatoes
Small onion
Fresh Garlic
Parmesan Cheese
Sea Salt
Coarse Black Pepper
Garlic Seasoning
Olive Oil
Butter
Bowl
Pan
Pot
Step 1
Add 1 1/2 pounds of large shrimp into a bowl, along with a pinch of sea salt, a teaspoon of coarse black pepper, a teaspoon of garlic powder and make sure your shrimp is coated with the seasoning well and then set aside.
Step 2
In a saute pan you are going to add two tablespoons of butter and two tablespoons of extra virgin olive oil and let the butter melt fully before adding in your shrimp once you have added the shrimp begin to saute the shrimp until they are fully cooked then remove the fully cooked shrimp from the pan and set aside.
Step 3
Now add your zucchini spirals into a pot to steam or boil, depending upon which type of Zucchini spirals you are using let the zucchini steam or boil until it’s fully cooked, but not mushy where it’s falling apart. Once the zucchini is cooked, strain any liquid and place back into pan and add half of a tablespoon of butter and allow the steam from the zucchini to melt the butter.
Step 4
Slice one cup of Super Sweet Cherry Tomatoes in half, dice one small onion, and mince three cloves of fresh garlic and then set aside while you add 3 tablespoons of extra virgin olive oil into a pan and allow it to heat up, begin by sauteing the onions and garlic first and then right at the end add the cup of the Super Sweet Cherry tomatoes and let them cook down slightly where the tomatoes are warm, but not overly cooked where the skin of the tomatoes starts to wrinkle.
Step 5
Now combine all of the ingredients, add the sautéed shrimp, the cooked zucchini spirals along with the sautéed tomato mixture into a bowl, mix together and garnish with a generous amount of Parmesan cheese and your Tomato Zucchini Shrimp Pasta is done.
