What you’ll need
Tomatoes
Asparagus bunch
Green onions
Lime (Optional)
Sea Salt
Freshly Ground or course black pepper
Pot
knife
Wooden Spoon
Bowl
Step 1
Prepare the asparagus by washing them thoroughly and then proceed by cutting them into quarter pieces before placing into a pot that has been filled halfway with water, then add a pinch of sea salt and bring to a boil until the asparagus become tender.
Step 2
Once the asparagus are cooked, strain the water and quickly blanch the asparagus in a bowl of ice water and this will allow the asparagus to keep that pretty green color and plus blanching slows down the loss of nutrients in veggies that have been boiled.
Step 3
Remove the asparagus from the ice water and transfer into a bowl.
Step 4
Now wash your tomatoes and prepare to slice them for this recipe I am using five Cocktail tomatoes, however, any kind of tomatoes will work. After slicing all of your tomatoes now chop half of a bunch of green onions and place into the bowl along with the tomatoes and the asparagus.
Step 5
Add freshly ground or coarse black pepper, a pinch of sea salt, the zest of the lime as well as the juice from the lime and then mix altogether.
Step 6
Now add vinaigrette dressing to the salad and for this recipe you can use store-bought salad dressing or make this salad extra special and go the route of homemade salad dressing, but what’s great about this salad is you can leave the dressing out altogether and it still taste delish.
