Welcome to A Modern Girl Recommends and for this midweek edition I will not only be talking about a sweet treat, but showing you all how to make one as well, and this one is definitely a classic that’s loved by many and they’re the Peanut Butter Chocolate Cups, and in my recipe I have swapped out some of the original ingredients and replaced them with organic ones and they taste amazing, so let’s see exactly how this classic is made.
What You’ll Need
1 cup of natural peanut butter
1 Capful of vanilla Extract
1/2 stick of unsalted Butter
A pinch of sea salt
3 1/2 cups of milk chocolate chips
1 1/2 cups of organic powdered sugar
1 tablespoon of olive oil
Let’s get started
Combine 1 cup of peanut butter into a mixing bowl along with 1 teaspoon of vanilla extract, a pinch of sea salt and a half of stick of room temperature or soften butter, and then mix ingredients together with a cooking utensil either a spoon or spatula.
Slowly incorporate 1 1/2 cups of powdered sugar also known as confectioner’s sugar into your peanut butter mixture. In this step you can either mix by hand with a spatula or use an actual mixer once your ingredients are evenly mixed set to the side.
Add 3 1/2 cups of chocolate chips to a measuring cup or double boiler along with one tablespoon of olive oil, one capful of vanilla extract and then heat until chocolate is fully melted. If choosing to melt your chocolate in a microwave heat in intervals of 10 seconds until your chocolate is melted.
Now it’s time to assemble your Peanut Butter Chocolate Cups, place your cupcake wrappers into each section of your muffin pan and then add one tablespoon of melted chocolate into each section and then place into freezer for 5 minutes or until your chocolate base is solid.
Once your chocolate base is ready, add one tablespoon of the peanut butter mixture over the solid chocolate and smooth out.
Now cover the peanut butter mixture with the remainder melted chocolate and then evenly smooth over the top and freeze for up to an hour or until the Peanut Butter Chocolate Cups are solid.
Tips & Tricks
Adding olive oil, coconut oil or a cooking oil of your choice to your chocolate before melting it will give the chocolate a nice shine and it does not affect the taste.
Try adding shaved chocolate into your peanut butter mixture and makes it even better.
If your melted chocolate curdles to smooth it out, add one tablespoon of warm water in at a time and stir until it becomes smooth.
