Welcome to A Modern Girl Recommends and on this Friday edition I will be sharing one of not just the quickest and simplest recipes to make, but a recipe that is perfect for those times when you are craving something sweet and anything with coconut is right up your sweet craving alley this is definitely one recipe to try and what is it you may ask it’s these sweet Coconut Pineapple Candies that only requires three ingredients and up to 13 minutes to bake but are so good you might just have to hide some for yourself, because everybody is going to be wanting some of these candies so let’s get things started.
What you’ll need
1 Can of Sweetened Condensed Milk
1 Bag of Sweetened Coconut
1 Cup of Dried Sweetened Pineapple
A mixing bowl
Ice cream scooper
Take one cup of dried pineapple and cut into smaller pieces.
Add to one large mixing bowl the whole bag of sweetened coconut and the one cup of diced pineapple and mix altogether.
Add the entire can of sweetened condensed milk to your coconut and pineapple mixture and make sure that all of the ingredients are fully coated and mixed evenly with the sweetened condensed milk, because the coconut will burn before it evenly cooks if not mixed properly.
With your ice scooper, take the coconut pineapple mixture and add to a baking sheet that has been greased prior with coconut oil spray or a Pam type spray. Make sure your scoops of the mixture is approximately one inch apart and place into a 350 degree preheated oven and let bake until golden brown. Normal cooking time is around 13 minutes, however, the time can vary from oven to oven so just keep an eye out for them and check them here and there.
Tips and Tricks
These Coconut Pineapple Candies can become very sticky and sometimes greasing your baking sheet just doesn’t cut it, try a Silpat NonStick baking sheet or some good ol’ fashion baking wax paper and removing your candies should be a breeze.
Wait until your candies are fully cooled down before removing
Want to make your Coconut Pineapple Candies a little more special try adding a little drizzle of melted milk, dark or white chocolate.
